Signs of Spring

I love taking nature walks.  I was noticing on my walks lately how many beautiful signs of spring had appeared.  In addition to making observations, sometimes I enjoy gathering a few safe wild edibles for making teas and other nutritious foods too.  Spring is the perfect time of the year to start hunting and gathering.

It is amazing to think about how the pioneers survived on many of these wild edibles, and they must have been so happy when spring appeared with new growth and wild foods to sustain them after the cold winter.

My kids are currently working on a Pioneer Unit Study about Davy Crockett and they just finished a unit study on Pine Trees.  This was great timing for our spring nature walk and their unit studies to coincide together and enhance their learning experience.

Dandelion is beautiful, edible, and medicinal.  

We love dandelion lemonade and dandelion tea.  Dandelion has edible flowers, leaves, and roots.   Every spring and early summer I gather as much fresh young dandelion leaves as I can to make fresh salads and stir fries and flower heads to make tea and lemonade.

Dandelion is a great substitution for cooked spinach.  I like to chop up a handful and added into recipes that call for spinach.  My grandparents ate dandelion leaves several times a week for their lunch and called it wilted lettuce.  They used a source of fat like bacon in a skillet and when it was cooked they added the dandelion greens and cooked them until they were wilted.  Grandpa always had fresh greens and garden produce all spring summer and fall.

In addition to using dandelion for tea, lemonade, and as a spinach substitute, we have made dandelion jelly and dandelion cookies in the past.  I have never harvested the roots for coffee myself, but I have purchased pre-made dandelion coffee before and it tastes similar to coffee.  I also personally use dandelion supplements in a capsule as needed to keep my kidneys and bladder in good working condition.  The dandelion can help the body release excess water and stimulate urination.  There is a time of the month when women’s bodies tend to store additional fluids and they feel bloated and the dandelion is an excellent resource for using a few days of the month for helping to reduce the extra water.

This year my goal is to make a dandelion syrup for multiple uses.  I plan to can it and then keep an opened jar in the fridge for use by the spoonful as needed.  It will be a great healthy addition to salad dressings, drinks, smoothies, pancakes, and more.

Violets are beautiful, edible, and medicinal. 

Violet flowers are delicious and fragrant in salads, teas, and the leaves can be used as a substitute for cooked spinach and used in stir-fry.  The flowers are often used as a fragrance and in soothing aroma baths.  The roots are also used as medicine.

Wild onions, chives, and garlic plants.  

The entire plant of wild onion, chives and garlic are used the same ways domesticated varieties are used both as a food and medicinal.

Pine buds, pine pollen, and pine needles.

Pine needles make a delicious citrus flavor tea full of vitamins, especially vitamin C.  Pine buds and pine pollen are full of protein and an array of amino acids.

Sometimes I take these nature walks by myself, but most of the time, one or more of my kids want to go for a walk with me.  We really enjoy these walks.

Walking around today, with the mindset thinking what the pioneers might of looked for and gathered for food and medicine made this walk even more exciting.

We also found beautiful butterflies flying above our head already. The weather was still too cool for much flight for them and they landed often to rest.  We followed this one for quite a ways in the yard, bushes, and trees.  It often stopped to rest.

Wild Roses

The roses are leafing out and starting to bud.  They also still have a few rose hips left from last season and we nibbled on these.  They are a great source of vitamins and antioxidants, especially vitamin C.

The grapes had fully leafed out and bloomed fragrant yellow flowers before most of the other trees even had leaves or buds.

My daughter enjoyed collecting the fragrant flowers from the wild grapes that had already fallen to the ground.

Potentilla 

Potentilla are also called cinquefoil and the leaves and flowers look similar to wild strawberries, but they have a yellow flower instead of a white flower.  They have red fruit that looks like a strawberry, but they are flavorless.  I would describe eating their fruit like eating a lovely red strawberry that tastes like water, no flavor and no aroma.  The flowers, fruit, and leaves are edible in salads and the roots are used as medicine.

There were so many beautiful treasures to find.  Some were so tiny you had to look very closely to see.

Wild Clover

Beautiful patches of red and white wild clover has popped up everywhere.  There are no blooms yet so I can’t tell which is the red and which ones are the white, but there are several varieties of leaf patterns in these plants.  Some are more solid green with a lighter green veragation.

Other clover patches have leaves that are veragated with green and white.

Another patch has a yellow and green verragated pattern.  So pretty!

Even in areas that seems dead or barely growing, little signs of spring flowers have appeared.

Now that it is spring, we need to start working on our gardens.

Today we removed weeds from the gardens and applied rich compost we made.

Spring surprise!  A lovely patch of volunteer lettuce!  This is going to be delicious in a salad!

Mint has returned too and is doing well.

We also found some carrots returning from last year.  We harvested one and it was nearly 5 inches long already!

Barrel planters filled with pansies have made it through the late frosts.  The flowers are stunning!

The Lord Is My Shepherd

When I was a young girl, I learned this passage of scripture.  But it wasn’t until I was older, and went through life experiences where this verse became real to me and I truly understood what it meant.

I am thankful to have learned this verse when I was young, and tucked into my heart and memory, so when I was in the midst of living life, I knew the truth.

The Lord is my shepherd; I shall not want.

He maketh me to lie down in green pastures: he leadeth me beside the still waters.

He restoreth my soul: he leadeth me in the paths of righteousness for his name’s sake.

Yea, though I walk through the valley of the shadow of death, I will fear no evil: for thou art with me; thy rod and thy staff they comfort me.

Thou preparest a table before me in the presence of mine enemies: thou anointest my head with oil; my cup runneth over.

Surely goodness and mercy shall follow me all the days of my life: and I will dwell in the house of the Lord for ever.

Psalm 23

This verse is comforting.  It is especially comforting when you find yourself going through a difficult time.  Having this verse memorized in your heart and mind helps you let go of fear and trust that Father God has everything in control and you don’t have to worry about anything.

Truly believe as a child of God that no matter what circumstance you go through, Father God will meet all your needs.  He will even meet your needs when you are in the midst of your enemies, Father God has made a way ahead of time and will take care of you even creating a banquet table prepared for you.

A few examples of when this verse became so real to me a few times in my life that I know truly who my Father God is and that he will always take care of me. These are only a few examples of the many that I could share.

During my Mother-in-laws battle with cancer and subsequent death, I saw first hand how Father God’s comfort and compassion in my life.  She was my best friend since I was 19 years old.  We talked daily by phone until her illness and then she moved in with me.  I took care of her 24/7 for the last year of her life until she died.  After a long and painful illness, she took her last breath surrounded by family in my home.   This was a very difficult time for me.  I was witnessing my best friend and the mother of my husband slowly slip away in this life.  My own father had died suddenly, on my birthday, the year before.  I was only 25 and these were the two people in my life who knew me the most, who I could call on to talk and lean on and they were my biggest supporters.  Now they were dead.  I could never hear their voices or call them for prayer and share something exiting that had happened.

Father God taught me to rest in him.  He helped me to put my trust in Him for guidance and trust Him for reassurance.   Father God taught me to be at peace and just trust him no matter what the circumstance I was going through.

Years later during pregnancy and childbirth (several times), I truly felt Father God was there leading me, and protecting me, even in moments that seemed like I was at death’s door.  I knew without a doubt that God was going to bring me through it, I didn’t need to fear death, and it would turn out exactly as he allowed it to.

Another part of this verse became real to me a few years ago.  At a time when things should have been great, and we had so much to look forward to, a man we thought was a friend and had gone into business with, stole nearly everything we had and stole the business and left us financially crippled.  It was a very hard time for our family.  It took a long time, several years, to recover from the financial loss we suffered by him, and we still have never been able to replace most of what he stole.   Father God wanted us to forgive that man for the evil he had done.  It was hard, but daily we prayed and asked God to help us forgive and prayed for that man to be blessed.

A few months after it happened, a local church knew we were going through a difficult time and gave our name to a local restaurant that each year gives a family a free dinner for the Thanksgiving Holiday.    We accepted their offer and went and enjoyed a wonderful meal.   We were blessed with so much kindness and food that it was overwhelming.  This was a very nice restaurant.   They had several staff wait on us, sometimes three and four staff at the same time as we have a large family.  The owner checked on us several times too, and we were treated so nice.  There were several courses of food, salad, bread, soups, entrees, etc.  They even brought a variety of deserts at the end of the meal.  The table was filled to overflowing, and we were treated as if we were some kind of royalty or something.  After the meal, they offered to show our kids around the restaurant.  They put aprons and hair nets on them and took them for a full tour of the kitchen where food is cooked for the guests and they were allowed to go into the refrigerated coolers where food is stored and to meet the chefs and shake their hands. They were also invited to come again anytime.   About a month later that restaurant blessed our family again and gave us several gifts of new clothes and toys for the kids.

I don’t know when during the meal that I started thinking of this verse, but my heart was filled with gratitude and this verse came to me.  I told my husband that even when we go through the most difficult times, our God is with us, leading us, filling our stomach, giving us drink, and protecting us.  At that very moment of gratitude, I saw a look on my husband’s face as he noticed something in the distance.  I turned and looked behind me over my shoulder.  There at another table, several rows away, was the very man who stole from us and had made our life so difficult.  I honestly nearly fainted.  It was so sureal to be in the whole situation.   I knew this verse had come true “He leadeth me” and “he prepares a table before me in the presence of my enemies” right before my eyes.

What are the odds that the very man who caused us so much harm would be at the same restaurant at the very same moment in time?  Father God had prepared this a head of time.  How was this even possible?  Only God could do this.

I know this truth.  God is with us!  God will take care of us when we follow him and allow him to lead us in the way we should go.  He will protect us and provide for us.  He is our shepherd.   This is comforting.

The choice is ours to make.  How will we proceed in life?  Who will we follow?  Who will we place our trust in?

We can TRUST Him.

I would encourage you to memorize this passage of scripture and teach it to your children.

Garden 2017 A New Beginning

Garden Season 2017 Has Begun!

We moved last year just before planting season and didn’t put in a garden in our new location.  Moving is a big job, and it takes a while to get resettled.  It was a quiet summer, and we missed our big garden and fruit trees that kept us busy and well fed.  We didn’t want to go through another summer without a garden and thinking about all those delicious fresh fruits and veggies got us excited! We couldn’t hardly wait to get started for 2017!

Growing a garden helps families in many ways.  It gives you ample opportunity to move and get some exercise, and it can improve your nutrition depending on what you grow.  If you enjoy watching plants grow, and spice up the garden with some flowers to attract butterflies and bees, and birds, then there is a good chance a garden will improve your mental health and outlook too.

With our large family, growing a garden helps reduce the costs of the weekly grocery trips. Though the initial cost of planting a garden can be expensive, you see a return when you are able to harvest during the summer and fall.

Starting Over

The homestead we moved to is a quiet lovely location, with tall trees and rolling hills.  But it is a much different environment from where we lived before where we had mature fruit trees and rich soil for a huge garden.   Where we live now, it is hard for grass to grow and it goes dormant very early in the growing season.

We are basically starting over.  One of the biggest needs in this yard is to rebuild the soil.  That can take a while and requires a lot of input of compost. Our current home is surrounded by pine trees, the soil is dry and hard and there is less rainfall here, and it also has has a high clay content .  The soil is quite acidic and there is not much top soil to grow in.  The previous residents had built a few raised beds to overcome these disadvantages, but it has been many years since they were used and the wood has rotted and fallen down and the beds were full of weeds, moss, and small volunteer trees.

As soon as the weather cooperated in March we got busy mending and expanding a couple of the old broken down raised beds and made them into our new garden.   The one advantage these beds do have is some depth of soil piled on top of the clay that will give room for the roots of plants.  With a few new longer boards put around the sides, and some nutrients added, we will be ready to grow.

I’m going to be honest.  I was discouraged at first.  It was hard to wrap my mind around relying on the broken raised beds when I was used to gardening in a large tilled garden with 100+ foot long rows in rich soils, abundant rain, and fertile crop land.  That garden and orchard was quite large and produced a lot of great fruits and vegetables for our family for several years.  Last summer it was hard for me to wrap my mind around how I was going to grow a garden here in this poor clay soil and in a small space. But now I am excited now that I have some new inspiration with these raised beds to help address these issues.

We put in some new longer boards expanding the size of the beds from 10 x 10  to about 12 x 16 feet.  We will make a second bed not far from this one.   Due to the small size of these beds, we plan to grow more intensively.  In the past we used long long rows with walking paths, but in the raised beds there is not enough room for that method.  Instead we are going to plant the garden with the “square foot” gardening method and not have well defined rows.  We will use as much space as we can in a square foot.  This method allows you to plant a lot of produce in a small amount of space. 

It was a big job to pull off the rotted boards, pull out metal rods and nails, and the heavy shredded matting.  These beds were neglected for many years and in poor condition.  We started off with a shovel to break open the dirt across the entire bed.  We also bucketed many many loads of dirt to the garden. We didn’t have a wheel barrow for this project so my son used my mop bucket and our dolly.  It worked very well, but took him about 100 trips over a few days to get enough dirt to the bed.  We plan to get a wheel barrel soon!

My son took the lead in this garden re-building project, and his younger siblings helped out a lot too.  He is interested in landscaping and loves working outdoors.  He added in some bagged compost to enrich the soil.  He also added ashes from our campfire pit, and dead leaves and mixed this all into the soil very well with a shovel, a rake, and a tiller.  Then he marked off each square foot and divided the entire garden with cord so we can plant with the square foot gardening method.

The garden sits on a small hill, so we only put boards on three sides for now to hold the soil in.  We may add a row of boards to the top side at a later date.  For now, we are trying to keep the expenses of putting in a raised bed garden down as much as we can.

One advantage to leaving off the boards on the top side, is to collect more rain water runoff from the hill when it does rain.  If it had boards across the top side, it would divert the rain runnoff away from the garden.  By leaving this open to the upside of the hill, we hope to maximise the opportunity for more water to run down the hill and end up in the garden.

The soil is prepped!  This garden is ready!

Potato Mushroom PepperJack Quesadilla

These yummy sandwiches were delicious!

3 Ingredients stuffed inside a toasted tortilla.  How simple and easy is that?This is a great sandwich to let your kids make in the kitchen.

We sauted sliced mushrooms in olive oil until done.  Then removed them from the heat and added a little more olive oil and diced potatoes. Season with garlic powder, salt and pepper.  Cover with a lid and cook them until soft.  Then combine mushrooms and potatoes together.  Place a slice of pepper-jack cheese on a tortilla and add the potato mushroom filling.  Toast on each side.  Served with a side of Jalapeno Kettle chips or tortilla chips and salsa and this sandwich is a win win!  Even my teen boys enjoyed it and asked for seconds.

Optional: The only thing I might add next time to my sandwich is a slice of avocado and some spinach leaves or  I would like to have a slice of fresh from the garden tomato would be a great flavor combo with the cheese.
